30-Day Shred and Friday Morning Antics

So, yesterday I started Jillian Michaels’ 30-day shred. I have to say, this morning I was very sore, especially my arms. Driving was a challenge when I had to go run errands. I’m going to try and see if I can actually continue for 30 days, and maybe I’ll post the results.


I have to say, I’m not a heavy person, I just love the idea of a healthy lifestyle. We’ve been making changes in our household lately, and being healthy is a goal for both Kurt and I.

Next week, I’ll be adding yoga in to my running, shredding, rollerblading, eating-healthy routine. Overdoing it? No! I love being active! I love being outdoors and hiking and etc.

It’s all about finding what works for you. I was telling a girl-friend of mine, even thought I’m not gainfully employed, I’m the busiest and most industrious unemployed person I know. It’s all about making good use of your time.

Anyway, for that matter, I had an interview with a company on Wednesday, and it’s really looking up. It’s funny, how, through all this drama, I knew that something good was going to come of it, and that God was really at work. I have had a lot of time to consider my life and re-organize a lot of things that needed my attention.

This week, I’ll be doing a closet overhaul (eep!). I’m looking forward to organizing my clothes system, and packing away stuff I never (or rarely) use. Then I can take a careful inventory of what I have, and be able to combine outfits from a capsule wardrobe.

Yesterday, I made Mango-Blueberry-Strawberry smoothies!


These were awesome! I’ve decided to load up on frozen fruit from Fresh and Easy, because they were having a big sale on their organic frozen fruit. I also picked up some fresh bananas (which I froze) and some fresh strawberries (because strawberries are out of season for all of two months in California). We have a permanent strawberry stand down the street that I’ve seen rarely close, it’s crazy.

Good Morning!

I’m awake and in planning-mode this morning. It’s been a long, fun weekend, and I’m sad that it’s over, but it’s time to jump back into Monday: meal plans and job-hunting.

A lot of prayer and meditation is going into this week. I have a lot to think about when it does come down to job hunting. The process is frustrating, but I believe something will come around. God works on His own time, and I’m here to do the work in the process.

Meal Planning:
On a different matter, now that we’ve gotten one whole week of successful meal planning going, there’s a few minor adjustments I think I need to make to the list:
-Freezing the meat (because, not knowing any better, I left it all in the fridge)
-Picking up easy “side dishes” such as veggies and grains. A lot of nights, we had a big plate of protein, but nothing on the side. It would also make dinners go farther and leave leftovers for the next day.
-Juicing for 3-4 days at a time, for two people. We drink the “mean green” juice once or twice a day each, and finding a way to do this for a couple of days at a time would be so much better.

Projects for this Week:
So I’m going through a couple of projects the next couple weeks, as I’m still working through a state of minimalism. This week, I’m focusing on organizing the closet into a workable state.

Here’s the thing: due to our current situation, we’ve been trying to figure out how to function in a small space. While I love the idea of minimalism and Tumbleweed houses, I haven’t found a way to make our small (rented) room work for us. Especially on a budget. Basically, I’m taking this horrible dresser out and making a reading area. Hence, the closet “overhaul.”

I’ve been doing well with my running these past couple weeks. It’s breaking that initial barrier of learning how to breathe and run, and not being winded after a whole minute of running. I’m learning to pace myself, which is hard, since I’ve been a short-distance runner all my life. It’s just a matter of slowing things down and not listening to fast-paced music at the beginning of my jog. I left off last week breaking an 11-minute mile for 3 miles. (I was down from a 16-minute mile the week before).

Kurt and I are thinking about taking up rollerblading. Yes. We spent some time trying to find a healthy habit that works for him, and the idea of rollerblading came up. Turns out, there are some pretty cute pairs out there (that don’t look like a throwback from the ‘90’s).

I am loving the new trails in Rancho Cucamonga, it’s become such an opportunity to spend time outdoors. What a creative way to transform some unused train lines.

Now, it’s time to sit back and relax with my coffee…and watch Chinese dramas. (…did I just admit that?)


I think I’m ready to find a different aspect on life.

Life is beautiful.

That’s it. I’m going to enjoy life, no questions asked. I’m going to take my shoes off, feel the sand beneath my toes, take a deep breath and…live.

I just want to feel alive.

I think it’s about time I find my place in life. I’m not going to let my job, my education, or my finances define me. That’s the way God intended.

It’s interesting, when I’m going through something in life, I pick random sermons and listen to them while I’m doing some sort of busywork (usually an art project). It’s funny how that random one sermon seems to hit the nail right on the head.

Tomorrow, if I can, I’m going to wake up early and figure out how to make the most of my days. I want to eat food I enjoy, be active, make things work.

I’m going to figure out how to make my life a happy one. Regardless of situation.

Happiness is a choice. Breathe in, breathe out.


Mid-Week Madness!

Okay, so there’s probably nothing “mad” about my Wednesay, I just wanted to give my post a silly name. You want madness? Fine. I’ll create it. Give me two more cups of coffee, some art supplies and a couple more hours.

Yesterday’s Interior Design projects were finished after 4 cups of coffee and it was a close call. I think sometimes I put a lot of detail into things and get in way over my head, but in the end, it was worth it. I am absolutely enjoying this class, and even if I don’t major in Interior Design, I’m still having fun with the concepts. I’ll post the pictures of my latest projects (once I get them back from grading).

I’m trying to sloooowww things down from last week, which was a crazy flurry of driving all around Los Angeles county.

Still working well with the meal planning, yesterday’s meal was Panko-crusted cod and asparagus. Recipe found here (Cooking Light). Omitted the tomato-relish because we’re not the biggest tomato-as-a-condiment fans.

Now for those of you who know me, I’m the type of person that spends way  too much on beauty experimenting. This kind of satiates that impulse to buy something, try it, and end up not liking it/keeping it forever in my beauty stash because I spent money on it and can’t throw it away.

So that’s my morning. Hopefully this gloomy day will clear up and I can lounge on the grass with a good book. :3

Good afternoon!

Finishing up some Interior Design homework because, let’s face it, homework is homework.

I am down to 147 this morning, meaning I’ve lost about 9 lbs.! Here’s to running, juicing and eating healthy! Project reset is going well.

Cooking, Running and Organizing.

Well, it’s been quite an eventful week! I’m not sure how to explain it, but there’s been a lot of ups and downs along with A LOT (I mean a LOT) of driving.

I’ve managed to find myself some part-time work, by the grace of God. I’m eventually going to have to find some full time work, but I’m so thankful for what I have right now.

Also, Saturday’s work sent me on a French macaron-adventure.

There’s kind of a silly story about me and macarons. Somehow, an obsession formed, probably due to the fact that the closest place I could find these pretties are in Pasadena (a good 45-minute drive, 60 with traffic). Not quite worth the drive for the overpriced cookies I crave. I found this place, Merely Sweets in Brea…(*cough on the way to Disneyland cough cough*) right off the 57 freeway! I was lured in by the cupcakes in the window and almost died when I found them in the pastry cake. Next time, I’m trying the cupcakes.

A 30-minute drive to Brea is DEFINITELY worth the macarons.

I digress.

SO with a lot of down-time this week, I’ve managed to fill it up with chores, to-do lists and hobbies. I’m not the type of person that can sit still.

One of my biggest accomplishments this week is pulling through with the meal planning. It’s really taken the stress out of our budget, we’re not eating fast food, and having delicious, home-made meals every night. I’ve found a site/article that made things quite easy, and I was surprised as to how well things worked out that way. Cooking Light: 80 meals under 40 minutes.  I usually don’t cook meals out of magazine articles because they tend to be lengthy, have a lot of steps/processes, and a lot of expensive ingredients. The meals from this article are simple, easy, and the ingredients (especially when found on sale) are really inexpensive.

2013-03-17 20.24.31Last night’s dinner: Soba noodles with sesame-Ahi tuna and edamame.

At the very least, it’s easier and less expensive than eating out every night. (I need to work on my food-photography skills, and possibly acquire a new camera.)

I have a few goals for the end of March/April, so bear with me.

1. Complete Dave Ramsey’s “Baby Step 1”.
-I’m well on my way!

2. Keep moving towards creating my “Capsule Wardrobe.”
-I’ve got a few key pieces for Spring, but I want to keep moving towards keeping it light.

3. Buy this book:

Because the concepts have saved my time and budget.

4. Organize closet, get rid of stuff, take things to storage.
-I’ve been slowly but surely moving things out of the room because I can’t stand clutter. I’ve been reading a lot of books/articles on minimalism, and realized there’s very little I need to live off of in order to survive. Slowly but surely, things will get organized if I work at it constantly.

5. Keep running!
-It takes 30-45 days to form a habit. I’m on week 2.
-Tonight’s run is going to be awesome, because of the Seattle-ish weather. Love it!

So a lot of positive outcomes happening this month. I’m really happy with the way things are going, even if there was a little bit of a freak accident in the process.

Keeping my head up and my eyes turned toward God.

Sunny Friday

Today, was a day of finishing up two important projects for 2013 (okay, so I’m a bit late).

My “Home Management, 2013” notebook, and a nifty Recipe notebook I’ve been meaning to put together, but haven’t had the time.

Well, now I have the time, and it’s really helping me get organized. I’m a list-maker, and when I get stuck on something difficult (like a decision, homework assignment, to-do list) I make lists.

Anyway, since I haven’t been busy with work lately, I thought it would be a good time to catch up on my blog!

With the recent events, I’ve been omitting food pictures, workout blogs, etc. This week, www.Gallonofcoffee.com will be back up and running to its full potential!

With the meal planning I’ve been working on, I’m hoping to post some delicious meals to help promote our switch to a healthy lifestyle.

The running lately has been absolutely fantastic! I’ve been learning how to keep pace and breathe properly, and found myself doing about 3 miles a night. I love making it a part of my routine, and it’s really been helping me clear my head.

I’ve also been taking a lot of time to have fun in life. I’ve been taking an Interior Design course, just because it’s something I’ve always been interested in, and it’s a mental relief from all of the biology classes I’ve been taking.

Also…I’ve started sewing! (Well, kind of) I’m starting at scarves, and hopefully after that I could move on to bigger projects. It’ll be a lot of fun, since a lot of the clothes that are in for spring are kind of easy-sew. (Think: Maxi-dresses.)

Also, I’ve been doing a lot of reading in my spare time. I picked up “The Mermaid Chair” by chance, and have been reading it while sprawled out on a blanket in the sun.


So far, so good. I’m about halfway through.
